Creating my own recipes using minimal ingredients or combining a range of leftovers is one of my favourite ways to cook. I used to follow recipes to the letter, but found it really boring and time consuming, so I started creating my own.
Don’t get me wrong, the recipes I create are not ground breaking, but they’re realistic, simple, cheap and quick to make. They’re the perfect option for someone who is time poor, but wants to create a healthy meal with minimal ingredients.
This dish is probably one of the quickest I’ve made and it really was delicious.
Cooking time: 7 minutes
-200g of prawns
-1 tablespoon of olive oil
-1 teaspoon of garlic granules
-1 tablespoon of soy sauce
-50g of fresh tagliatelle
-5-6 olives (optional)
-1 small cube of feta cheese
-1 handful of spinach
Note: I had some leftover potatoes from the night before that I added in to use them up, so if you have any other leftovers, you can throw them in.
Remove the prawns from the packet an add to a bowl or saucepan covered with boiling water. Leave them to sit in the water for approximately 5 minutes or until defrosted. At the same time, add the tagliatelle to a separate saucepan with boiling water and boil for 4 minutes. Once cooked strain the water and leave to sit for a couple of minutes.
At this stage, the prawns should be defrosted, so strain the water off them and add to a heated pan with olive oil and fry them for one minutes each side. Add the garlic granules, spinach, tagliatelle and soy sauce and fry for a further 1-2 minutes, mixing throughout.
Remove the mixture from the pan, add to a bowl and top with the olives and feta cheese.
Serve and enjoy! x
